Abstract

The role of energy carriers in the food industry, especially in the bread production process, fundamentally determines the efficiency, costs and sustainability of the supply chain.
The study examines the role of energy carriers in the bread production supply chain, with particular attention to the effects of electricity and fossil fuels. Fluctuations in energy prices, the rise of renewable energy sources, as well as geopolitical and climate change factors pose significant risks to the stability and costs of food industry processes. The research presents the main stages of bread production, the energy-intensive critical points, and the main trends in energy price developments, with particular attention to examples from Germany. Based on the results, it can be concluded that the impact of energy carriers on the supply chain affects not only economic efficiency, but also sustainability and food safety. The study also emphasizes the importance of increasing energy efficiency, developing infrastructure, and developing risk management strategies.
